• ¼ cup coconut oil, plus more for greasing

  • 3 ripe bananas, mashed 



Preheat the oven to 375°F and grease a loaf pan with coconut oil. In a medium mixing bowl, whisk together the eggs, coconut oil, maple syrup, and vanilla extract. In a separate mixing bowl, combine the almond flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Add the dry ingredients to the wet, and mix well. Add the mashed banana and mix until just combined. Pour the batter into the prepared loaf pan and bake for about 40 minutes, until golden brown. Let it cool and then slice it into 5 large slices or 10 small slices. Divide the slices between 5 containers.
